
Maple Roasted Sweet Potatoes
- 1 large sweet potato (roughly 1 lb), peeled, cubed
- ½ cup walnuts or pecans
- 1 large onion, sliced
- 2 Tbsps Maple Valley maple syrup
- 2 Tbsps extra virgin olive oil
- 1-2 tsps dried chili flakes
- 1 tsp kosher salt
- ½ tsp black pepper
- 1 Tbsps Italian parsley, minced
- ½ cup feta, crumbled
Heat oven to 425º. Spread sweet potatoes, walnuts, onions, and top with maple syrup, olive oil, chili flakes, salt and pepper. Toss to coat evenly and bake for 25-35 minutes, stirring once halfway through. Once the sweet potatoes are cooked through and browned, take out of the oven, let cool a bit, top with parsley and feta and drizzle of maple syrup and olive oil.
