Do you love banana bread? I’ve got an updated twist for you with my Grammy’s Organic Banana Maple Bread.
Hey Maple Valley friends, Michelle Pedretti here, the Marketing & Communications Manager. I don’t know about you, but it seems like one day I’m buying pretty green bananas at my local co-op and before I know it, they are quite yellow and brown and past the point that anyone in my house wants to eat them! Which is GREAT and no biggie because we LOVE banana bread and it’s a pretty quick and easy thing to do on a Saturday or Sunday morning while everyone else is still sleeping and you’re getting your first cup of coffee in. And what a treat for everyone else, because who doesn’t like waking up to the smell of sweet banana bread goodness wafting through the house?
My Grammy was a big fan of delicious but easy baking and I’m a big fan of delicious, easy and healthy baking and cooking. So, I took her recipe up a notch by using all organic ingredients and swapping out the white sugar with Maple Valley Maple Sugar. The result is even more delicious and nutritious. I’m pretty sure if Grammy was still with us today, she would love this updated version. I hope you do, too!
Grammy’s Organic Banana Maple Bread
Ingredients:
- 1/4 cup organic butter
- 3/4 cup Maple Valley Maple Sugar
- 2 organic eggs
- 2 cups organic flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 2 Tbsp. organic milk
- 1 1/2 cup organic mashed bananas
- 1/2 cup organic nuts, chopped (optional)
Directions:
Cream together softened butter, maple sugar and eggs. Add in flour, baking powder and baking soda. Blend in mashed bananas and milk mixing thoroughly. Gently fold in chopped nuts if desired. Put in one larger or two medium sized greased bread pans.
Bake at 350 degrees for 45-50 minutes or until golden brown on top.
Tip: Can check doneness with a toothpick in the middle to see if it comes out fairly clean. A little banana dough moistness is ok – far better than too dry, over-baked bread!
Enjoy a slice slathered in organic salted butter with an extra drizzle of Maple Valley Dark & Robust Maple Syrup!!
