Banana Oatmeal Pancakes

Banana Oatmeal Pancakes

These vegan pancakes are fluffy and fast.

 

Ingredients

  • 2 medium ripe bananas (best when they have lots of brown spots)
  • 2 eggs
  • 1/2 cup unsweetened almond milk
  • 1 tsp. vanilla extract
  • 1-1/2 cups old fashioned rolled oats
  • 2 tsp. baking powder
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. teaspoon salt
  • Coconut or olive oil, for cooking

Directions

1. Add all of the ingredients into a blender and blend until completely smooth. Let the batter sit in your blender while you heat your pan up.

2. Lightly coat a griddle with coconut oil or olive oil and place over medium heat. Once the griddle is hot, place 1/3 cup of the batter on the griddle per pancake and cook for 2-4 minutes until the pancakes slightly puff up and you see bubbles along the edges.

3. Flip cakes and cook until golden brown on underside. If the pancakes are browning too quickly then lower the heat. Starting on medium heat, then decreasing to medium-low should ensure that your pancakes don’t burn. If your griddle starts smoking it is too hot.

4. Wipe skillet clean and repeat with more oil and batter.

Makes 9 pancakes total.
